Date Caramel Slice
This caramel slice uses dates for the caramel layer, which means you get natural sweetness along with fibre, potassium, and polyphenols, instead of just sugar and syrup.

Caramel Slice

Ingredients
Base
225g plain flour
90g coconut sugar
40g desiccated coconut
180g butter, melted
Caramel Layer
300g pitted dates
70g butter, ghee, or coconut oil, melted
2 tablespoons nut butter
1 teaspoon vanilla extract
2 tablespoons milk of choice
Pinch of salt
Chocolate Topping
200g dark chocolate
1 tablespoon coconut oil
Method
Preheat oven to 180°C. Line a small slice tray with baking paper.
Prepare the base:
In a bowl, combine flour, coconut sugar, desiccated coconut, and melted butter. Mix until well combined.Bake:
Press the mixture evenly into the tray and bake for 15 minutes or until lightly golden. Remove and allow to cool slightly.Make the caramel:
Add all caramel ingredients to a food processor and blend until smooth and thick.Assemble:
Spread the caramel evenly over the cooled base. Place in the fridge to firm.Prepare topping:
Melt chocolate with coconut oil until smooth. Pour over the caramel layer and spread evenly.Set and slice:
Refrigerate until fully set, then slice into 12 pieces.
