Savoury Mince

Ingredients
1 brown onion, finely diced
1 carrot, finely diced
2 celery stalks, finely diced
2 garlic cloves, minced
500 g grass-fed + finished beef mince
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tbsp pure maple syrup
500 mL chicken broth
1 tbsp prime seasoning or (1 tsp smoked paprika, 1 tsp dried thyme,½ tsp oregano, 1-2 tsp dried offal powder)
Generous amount of Salt and pepper
Optional vegetable additions - if you’ve got some vegetables in the fridge to use up:
Add 1–2 cups of any combination:
Mushrooms
Zucchini
Green beans
Peas
Baby spinach
Capsicum
Method
Heat olive oil in a large frying pan over medium heat.
Add onion, carrot and celery and cook for 5–7 minutes until softened.
Stir through garlic and cook for 30 seconds until fragrant.
Add the beef mince, breaking it apart as it browns.
Stir in tomato paste, Worcestershire sauce, maple syrup and seasonings.
Pour in the stock and mix well.
Add any extra vegetables and simmer gently for 10–15 minutes until the liquid reduces into a rich, thick sauce.
Taste and adjust seasoning before serving.
Serving Ideas
Top with 2 poached or fried eggs for an extra protein boost.
Serve on toasted sourdough.
Spoon over roasted sweet potato or pumpkin.
Use as a filling for baked potatoes or lettuce cups.
